The trick to poaching fish

To do a traditional poaching, it's important to make a great poaching liquid. Start with a half-gallon of water. Add a chopped small onion, a stalk of celery, and a carrot, along with 3 ounces of vinegar, an ounce of lemon juice, a couple bay leaves, a half teaspoon of peppercorns, a handful of parsley stems, and a pinch of thyme. Let this simmer for 45 minutes and you will have a great poaching liquid. Just strain and poach away.
