Morels

Morels are delicious mushrooms which can be found growing all over the world in a wide variety of habitats every spring. Morels have a rich and complex flavor that goes well with almost any food. Morels should be eaten fresh in the spring but are delicious dried the rest of the year. The fresh morels have a slightly chewy honey comb texture with a rich smoky flavor. They are very popular in cream sauces, grilled, or even plain as a side dish. I loved them sautéed with ramps and made into a pasta sauce, or a frittata. Dried morels are usually used in soups, stuffing’s, and stews, because the flavor of the mushroom is intensified by the drying and will be brought out by the slow cooking. You can find dried morels in most stores, while fresh mushrooms can be found in the spring in many specialty stores.
