Mealy versus waxy potatoes

I think it’s important to know the difference between these two classifications of potatoes. Mealy potatoes bake well and are therefore also known as "bakers." They have a high starch content and a thick skin. These are also the best potatoes for deep frying and pureeing. Waxy potatoes are not starchy and are best for boiling and mashing. As we head into the winter months, potatoes become a dietary staple. They are filling and delicious with a very wide variety of dishes.
