Cauliflower!

I love adding cauliflower to salads in the late fall through the spring when it’s in season it. Choose firm, compact heads when buying cauliflower. The attached leaves should have a bright green color. Avoid cauliflower that has a yellowish color or spreading florets. Season with a little extra-virgin olive oil and salt for a simple, healthy, and delicious side dish.
