Cauliflower

Cauliflower is a wonderful winter vegetable that goes great tossed raw in salads. You can also cook cauliflower by blanching, steaming, baking, or sautéing it. Choose firm, compact heads when buying. The attached leaves should have a bright green color. Avoid cauliflower that has spots, an aging yellowish color, or spreading florets. They are strong indications of cauliflower that is getting a little old. But do experiment with different colors of cauliflower; there is yellow, green, purple and the traditional white, and all are delicious
