Leftover Pasta

Left over pasta is delicious reheated the next day. The texture becomes different; it is not as resilient as it was when first cooked, but it takes on a new dimension since it has absorbed some of the sauce. To heat leftover pasta you can add remaining sauce, chicken stock, or just plain water. Heat the pasta over a low flame in a nonstick pan, stirring regularly. I love it when reheated pasta begins to form a crust.
