Simple and delicious dessert

Think of this simple yet wonderful dessert the next time you find fresh, large-curd ricotta cheese: spoon the cheese into a fine sieve or a colander lined with a basket-type-coffee- filter. Set the sieve over a bowl and let the ricotta drain in the refrigerator overnight. Spoon the drained cheese into a loaf pan lined with plastic wrap. Chill it until firm, then invert it onto a serving platter. Cut the loaf into ¾-inch slices, and drizzle them with honey and some of your favorite toasted nuts.
