Ack! I'm a noob at making gnocci! Does anyone know how many potatoes I should be boiling?

My usual would be one potato per person, but since gnocchi are a favourite I always add few more for leftovers

My mom's receipe calls for 2 cups of water and 2 cups of instant potatoes. I prefer to use real potatoes. Thank you for your comments PEEN! I also copied a potato gnocchi in Emeril.com site. Check it out too!
