Uncooked olive oil sauce

The resourceful cooks of Abruzzo are never at a loss for a quick and delicious way to dress fresh maccheroni or excellent dry pastas. Just take whatever is on hand, good quality olive oil, a few cloves of garlic, hot pepper, a cluster of fresh herbs, or a handful of nuts, and produce a wonderful sauce in minutes. The foundation of a simple sauce is the olive oil. Authentic olive oils from Abruzzo will always taste best, but any top quality Italian extra-virgin olive oil will make a delicious sauce too. These sauces are not only delicious on pasta, they are marvelous versatile condiments for meats, fish, poultry, and vegetables, too. Choose your favorite herbs and nuts, they need only a whirl in the food processor and they are ready to dress your pasta. No cooking needed for this sauce.
