Poached Eggplant

We Italians love our eggplant but frying is not always a choice I want to make. Poaching eggplant in a water and vinegar solution in segments, then draining well and seasoning it with some olive oil, sliced garlic and a few mint leaves it, is great as an antipasto or as a crostini topping-chopped into small bits then topped with slices of prosciutto. It is also great tossed with a can or two of tuna, marinated mackerel, or with tomato sauce to dress pasta
