veal osso bucco

I tried the veal osso bucco the other night for the first time,tasted great but the veal stuck to the pan and then the string came off and the veal was in pieces.I used canoa oil instead of vegetable oil.Would that have made the difference or was the oil too hot or not hot enough..thanks
