The ins and outs of spinach

I love cooking with spinach because it is versatile and very good for you. Fresh spinach is ideal, but spinach holds up well when frozen; if you do not have a lot of time, you can get away with using frozen, packed spinach. Make sure that you wash spinach very well, and be sure to be careful when handling it because it bruises very easily. The large stems and ribs can be removed and discarded.
