Burrata

Burrata cheese is made from cow’s milk and is produced traditionally in Puglia, the region that makes up the heel of Italy’s boot. The outer casing of burrata is solid mozzarella while the inside contains both mozzarella and cream, giving it a distinctly creamy texture that earns its name, which is Italian for “buttered.” The rich texture and delicate flavor of burrata make it compatible with prosciutto crudo, sautéed broccoli di rape, nice crusty bread, or fresh tomatoes and olive oil. You can find this artisanal cheese at import and gourmet stores.
