What to look for when buying pasta

You should know that all dry pastas are not the same. Always look for the saying “made of 100% durum semolina wheat” somewhere on the package. That indicates that only durum (hard) wheat was used and that the pasta will be delicious with a nutty flavor, and it will assure you that the pasta will cook al dente. Also look for and buy brands with a golden yellow color. Dry pasta should be opaque and have a rough quality to the feel. White spots on pasta indicate that the pasta is old. Although dry pasta has a long shelf life, it is best if cooked and eaten sooner rather than later. Blotchy, unevenly colored pasta may have been dried or stored improperly. Look for an even color. You can find good quality pastas at most local food stores and specialty markets. Look for Lidia's pasta brand.
