Adding some flavor to your minestra

Adding flavor to any minestra or soup is simple and easy. One sure way is to drizzle some of the best extra-virgin olive oil you have over a bowl of minestra just before serving it, or place a cruet of it on the table and let people help themselves. Freshly grated cheese always delivers extra flavor or pass a nice chunk of Grana Padano or Pecorino-Romano cheese with a small grater around the table for people to grate their own. I do both and add some freshly ground pepper as well for extra spice. A plateful of grilled country bread brushed with garlic and olive oil is always a great companion to soup.
